It’s an impressive dish perfect for family dinners or gatherings, delivering rich flavors and a mouthwatering aroma that will delight your guests.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1 cup fresh pineapple, diced
  • 8 slices of bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts on a cutting board and gently pound them with a meat mallet to ensure even cooking (optional).
  3. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this seasoning mixture all over the chicken breasts.
  4. In a skillet over medium heat, cook the bacon until crispy (about 5-7 minutes). Remove and drain on paper towels, then chop into small pieces.
  5. In a medium bowl, combine BBQ sauce and diced pineapple, stirring well to coat the pineapple.
  6. Wrap each seasoned chicken breast with two slices of bacon, securing the ends with toothpicks if necessary.
  7. Lightly grease a baking dish and arrange the bacon-wrapped chicken breasts inside, ensuring they are not overcrowded.
  8. Pour the BBQ sauce and pineapple mixture over the chicken, ensuring each piece is generously coated.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the bacon is crispy.
  10. Use a meat thermometer to ensure the chicken is cooked through.
  11. Let the chicken rest for 5 minutes, then garnish with fresh cilantro or parsley.
  12. Slice the chicken into thick pieces and serve on a platter, drizzling any remaining BBQ sauce over the top.

Notes

  • Choosing the Right BBQ Sauce: Use a BBQ sauce that you love, whether sweet, tangy, or spicy. Homemade BBQ sauce can also be a great option.
  • Pineapple Variations: Canned pineapple chunks or grilled pineapple can be used as alternatives; just drain excess juice if using canned.
  • Bacon Alternatives: For a healthier option, consider using turkey bacon instead of regular bacon.
