3 medium apples (Granny Smith, Honeycrisp, or Fuji), peeled, cored, and diced into 1/2-inch pieces
1 cup all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1 large egg
1/2 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Vegetable oil, for frying (about 4 cups)

2–3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Prepare Apples: Peel, core, and dice apples into 1/2-inch pieces. Toss with 1 tablespoon of lemon juice to prevent browning (optional). Set aside.
Make Fritter Batter:
In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract.
Pour wet ingredients into dry ingredients and gently whisk until just combined. Do not overmix.
Gently fold in the diced apples until evenly distributed.
Fry Fritters:
Heat 4 cups of vegetable oil in a deep pot to 350°F (175°C).
Carefully drop spoonfuls of batter into the hot oil, frying in batches of 3-4.
Fry for 2-3 minutes per side, until golden brown and cooked through.
Remove with a slotted spoon and drain on paper towels.
Make Glaze:
In a medium bowl, whisk together powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth. Add more milk, 1 teaspoon at a time, until desired consistency is reached.
Glaze Fritters:
While fritters are still warm, dip them into the glaze or drizzle the glaze over the top.
Place glazed fritters on a wire rack to allow the glaze to set (about 10-15 minutes).
Notes
Don’t overmix the batter for tender fritters.
Maintain oil temperature for even cooking.
Fry in batches to prevent oil temperature from dropping.
Use fresh oil for the best flavor.
Adjust sweetness by adding more sugar to the batter or glaze.
