  • 1 tablespoon sugar
  • 1/4 cup chicken broth

Instructions

  1. In a medium bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well until all the chicken is coated. Let it sit for about 15-20 minutes while you prepare the other ingredients.
  2. Slice the onion and bell peppers into thin strips for even cooking and presentation.
  3. Mince the garlic and ginger, using a microplane for the ginger for a finer texture.
  4. Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of vegetable oil and let it heat until it shimmers.
  5. Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken and set aside.
  6. In the same skillet, add the sliced onion and bell peppers. Stir-fry for about 3-4 minutes until they start to soften.
  7. Add the minced garlic and ginger to the skillet. Stir and cook for an additional 1-2 minutes until fragrant.
  8. In a small bowl, mix together the black pepper, oyster sauce, rice vinegar, sugar, and chicken broth.
  9. Pour the sauce mixture into the skillet with the vegetables. Stir well and let it simmer for about 2-3 minutes.
