  • 4 cups shredded cabbage (green or a mix of green and purple)
  • 1 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
  • 1/4 teaspoon hot sauce (such as Tabasco or Sriracha, adjust to taste)
  • Salt and freshly ground black pepper to taste
  • 12 small corn or flour tortillas
  • Optional toppings: avocado slices, pickled onions, crumbled cotija cheese, lime wedges

Instructions

  1. Pat the shrimp dry with paper towels. In a medium bowl, toss the shrimp with olive oil, Cajun seasoning, garlic powder, smoked paprika, cayenne pepper (if using), salt, and pepper.
  2. Heat a large skillet (cast iron is ideal) over medium-high heat. Add the seasoned shrimp to the hot skillet in a single layer. Avoid overcrowding the pan; cook in batches if needed.
  3. Cook the shrimp for 2-3 minutes per side, or until they are pink and opaque and slightly charred. Be careful not to overcook them. Remove from skillet and set aside.
  4. In a large bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro.
  5. In a separate small bowl, whisk together the mayonnaise, lime juice, apple cider vinegar, sugar, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the cabbage mixture and toss well to combine. Taste and adjust the seasoning as needed.
  7. Cover the slaw and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. In a small bowl, combine the sour cream, mayonnaise, lime juice, chopped cilantro, minced garlic, and hot sauce.
  9. Stir well to combine. Taste and adjust the seasoning as needed.
  10. Cover the sauce and refrigerate until ready to use.
  11. Warm the tortillas according to package directions.
  12. Place a generous spoonful of the creamy slaw in the center of each tortilla.
  13. Top the slaw with several pieces of the Cajun shrimp.
  14. Drizzle the taco sauce over the shrimp.
  15. Add any optional toppings, such as avocado slices, pickled onions, or crumbled cotija cheese. A squeeze of fresh lime juice is also a great addition.
  16. Serve immediately and enjoy!
