Tender roasted sweet potatoes tossed in a warm cinnamon spice blend and drizzled with a luscious maple butter glaze. A perfect side dish for holidays or any weeknight meal!

Ingredients

Scale
  • 3 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 1/4 cup olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup pure maple syrup
  • 2 tablespoons butter, melted
  • 1/4 cup chopped pecans or walnuts (optional, for garnish)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Sweet Potatoes: Preheat oven to 400°F (200°C). Peel sweet potatoes and cut into 1-inch cubes.
  2. Season and Roast: In a large bowl, combine sweet potatoes, olive oil, cinnamon, nutmeg, ginger, salt, and pepper. Toss to coat evenly. Spread in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
  3. Add Maple Syrup and Butter: While sweet potatoes are roasting, melt butter and whisk in maple syrup. Remove sweet potatoes from oven and drizzle with maple butter glaze. Toss to coat.
  4. Return to Oven: Place back in the oven and roast for another 5-10 minutes, or until the glaze is bubbly and slightly thickened.
  5. Serve and Garnish: Transfer to a serving dish. Garnish with chopped pecans or walnuts and fresh parsley, if desired. Serve immediately.

Notes

  • Spice it Up: Add a pinch of cayenne pepper to the spice mixture for a little heat.
  • Add Some Citrus: A squeeze of fresh orange juice or lemon juice can brighten up the flavors.
  • Use Different Sweeteners: If you don’t have maple syrup, you can substitute honey or brown sugar.
  • Make it Vegan: Use vegan butter or coconut oil instead of butter.
  • Add Other Vegetables: Feel free to add other root vegetables like carrots or parsnips to the mix.
  • Storage: Leftover sweet potatoes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or microwave before serving.
