3 large sweet potatoes, peeled and cubed into 1-inch pieces
1/4 cup olive oil
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup pure maple syrup
2 tablespoons butter, melted
1/4 cup chopped pecans or walnuts (optional, for garnish)
1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
Prepare the Sweet Potatoes: Preheat oven to 400°F (200°C). Peel sweet potatoes and cut into 1-inch cubes.
Season and Roast: In a large bowl, combine sweet potatoes, olive oil, cinnamon, nutmeg, ginger, salt, and pepper. Toss to coat evenly. Spread in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
Add Maple Syrup and Butter: While sweet potatoes are roasting, melt butter and whisk in maple syrup. Remove sweet potatoes from oven and drizzle with maple butter glaze. Toss to coat.
Return to Oven: Place back in the oven and roast for another 5-10 minutes, or until the glaze is bubbly and slightly thickened.
Serve and Garnish: Transfer to a serving dish. Garnish with chopped pecans or walnuts and fresh parsley, if desired. Serve immediately.
