1 cup plain Greek yogurt (full-fat or non-fat)
2–3 Medjool dates, pitted
1/4 cup granola (with nuts and seeds preferred)
1 tablespoon almond butter (or any nut butter)
1 teaspoon chia seeds
1/2 teaspoon cinnamon
Optional toppings: fresh berries (strawberries, blueberries, raspberries), shredded coconut, cacao nibs, honey or maple syrup
Instructions
(Optional) Soak Dates: If dates are dry, soak in warm water for 10-15 minutes. Drain well.
Chop Dates: Finely chop 1-2 dates for topping. Set aside.
Make Date Paste: Place remaining pitted dates in a small food processor or blender.
Blend Date Paste: Add 1 tablespoon of water and blend until smooth and creamy. Add more water (1 teaspoon at a time) if needed. Scrape down sides as necessary.
Yogurt Base: Spoon Greek yogurt into a bowl.
Add Date Paste: Drizzle date paste over yogurt and swirl gently.
Sprinkle Cinnamon: Sprinkle cinnamon evenly over the yogurt and date paste.
Add Granola: Sprinkle granola over the yogurt.
Add Chopped Dates: Sprinkle chopped dates over the granola.
Add Almond Butter: Drizzle almond butter over the granola and dates.
Add Chia Seeds: Sprinkle chia seeds over the bowl.
Add Optional Toppings: Add any desired toppings like berries, coconut, cacao nibs, honey, or maple syrup.
