This Garlic Black Pepper Chicken is a quick and delicious stir-fry featuring marinated chicken pieces infused with robust garlic and black pepper flavors. Perfectly cooked and served over rice or noodles, it makes for a satisfying meal that’s easy to prepare.

Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken thighs or breasts
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt (adjust to taste)
  • 2 green onions, chopped (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Cut the chicken into bite-sized pieces, about 1 to 1.5 inches in size.
  2. In a medium bowl, combine chicken pieces with soy sauce, oyster sauce, cornstarch, sugar, sesame oil, and salt. Mix well and let marinate for at least 30 minutes (or longer for enhanced flavor).
  3. In a small bowl, mix minced garlic and freshly ground black pepper.
  4. In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering.
  5. Add marinated chicken pieces in a single layer. Cook undisturbed for 4-5 minutes until golden brown on one side.
  6. Flip the chicken, add the garlic and black pepper mixture, and stir to coat. Cook for another 3-4 minutes until chicken is cooked through.
  7. Ensure the internal temperature reaches 165°F (75°C) or cut a piece to check that it’s no longer pink.
  8. Remove from heat, transfer to a serving platter, and sprinkle with chopped green onions.
  9. Serve over steamed rice or toss with stir-fried noodles.

Notes

  • Adjusting Spice Levels: Add crushed red pepper flakes or chili oil for extra heat.
  • Vegetable Additions: Consider adding bell peppers, broccoli, or snap peas for a balanced meal.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet with a splash of water or broth.
  • Meal Prep: Marinate chicken ahead of time for quick cooking later.
