  • 1.5 lbs Yukon Gold potatoes, cut into 1-inch cubes

Instructions

  1. Prepare the Potatoes: Preheat oven to 400°F (200°C). Wash and cut the Yukon Gold potatoes into 1-inch cubes. In a large bowl, toss the cubed potatoes with 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1/2 teaspoon of dried oregano, 1/4 teaspoon of paprika, salt, and pepper. Spread the seasoned potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping them halfway through for even cooking.
  2. Prepare the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, combine the garlic powder, onion powder, dried thyme, dried rosemary, paprika, salt, and pepper. Rub this mixture evenly over both sides of the chicken breasts.
  3. Sear and Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the seasoned chicken breasts in the skillet. Sear for 4-5 minutes per side, or until golden brown. Reduce the heat to medium and continue cooking the chicken for another 5-7 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Rest the Chicken: Remove the chicken from the skillet and set aside on a plate. Cover loosely with foil to keep it warm while you prepare the garlic butter sauce.
  5. Make the Garlic Butter Sauce: In the same skillet you used to cook the chicken, melt the butter over medium heat. Add the minced garlic to the melted butter and sauté for 1-2 minutes, or until fragrant. Pour in the chicken broth and lemon juice. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet. Simmer the sauce for 3-5 minutes, or until it has slightly thickened. Stir in the chopped fresh parsley and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Assemble and Serve: Place the roasted potatoes on a serving platter. Top with the cooked chicken breasts. Generously drizzle the garlic butter sauce over the chicken and potatoes. Garnish with extra chopped fresh parsley, if desired. Serve immediately.

Notes
