Instructions
Prepare Guava Puree: Peel and roughly chop guavas. Blend with 1 cup of water until smooth. Strain the puree through a fine-mesh sieve (optional, but recommended). Discard seeds and pulp.
Make Simple Syrup: In a saucepan, combine 1 cup sugar and 1 cup water. Heat over medium heat, stirring until sugar dissolves. Simmer for 1-2 minutes. Cool completely.
Assemble Mocktail: In a pitcher, combine guava puree, lime juice, and cooled simple syrup. Stir well and adjust sweetness/tartness to taste.
Add Sparkling Water: Slowly pour in chilled sparkling water or club soda. Stir gently.
Chill: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
