2 pounds Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
1/4 cup olive oil
1/4 cup Dijon mustard
2 tablespoons honey
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley, for garnish (optional)
Instructions
Preheat oven to 400°F (200°C).
Wash and cut the Yukon Gold potatoes into 1-inch cubes.
Pat the potatoes completely dry with paper towels.
In a small bowl, whisk together the olive oil, Dijon mustard, honey, apple cider vinegar, garlic powder, onion powder, and smoked paprika.
Taste and adjust the seasoning as needed.
Pour the honey mustard dressing over the dried potatoes in a large bowl. Toss to coat evenly.
Spread the potatoes in a single layer on a large baking sheet (lined with parchment paper for easy cleanup). Avoid overcrowding.
Roast for 30-40 minutes, flipping the potatoes halfway through, until tender and golden brown.
Check for doneness by piercing with a fork.
Transfer to a serving dish. Garnish with chopped fresh parsley (optional).
Serve immediately.
Notes
Spice it up! Add a pinch of red pepper flakes to the honey mustard dressing.
Add herbs. Experiment with different herbs, such as rosemary, thyme, or oregano, to add a unique flavor to the potatoes.
Use different potatoes. While I prefer Yukon Gold potatoes, you can also use red potatoes or russet potatoes. Just keep in mind that russet potatoes may require a slightly longer cooking time.
Add vegetables. Toss in some other vegetables, such as Brussels sprouts, carrots, or onions, along with the potatoes for a more complete side dish.
Make it vegan. Substitute the honey with maple syrup or agave nectar to make this recipe vegan.
Air Fryer Option: For an even quicker and crispier result, you can cook these potatoes in an air fryer. Preheat your air fryer to 400°F (200°C). Toss the potatoes with the honey mustard dressing as directed, then spread them in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are tender and golden brown.
Make Ahead: You can prepare the honey mustard dressing ahead of time and store it in the refrigerator for up to 3 days. When you’re ready to cook the potatoes, simply toss them with the dressing and roast as directed. You can also cut the potatoes ahead of time and store them in a bowl of cold water to prevent them from browning. Just be sure to dry them thoroughly before tossing them with the dressing.
