Jello Divinity Candy: A Sweet & Easy Recipe Guide

Light, airy Jell-O Divinity that melts in your mouth! This classic candy features a soft-ball sugar syrup, fluffy egg whites, Jell-O for flavor and color, and chopped nuts. Perfect for holidays and sweet cravings!

  • 1 (3 ounce) package Jell-O gelatin (any flavor, such as strawberry, raspberry, or lemon)
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 2 large egg whites, at room temperature
  • 1/2 cup chopped nuts (walnuts, pecans, or almonds)
  • Powdered sugar, for dusting

Instructions

  1. Bloom the Gelatin: In a medium bowl, dissolve the Jell-O gelatin in 1/4 cup of cold water. Stir well to remove clumps. Set aside for at least 5 minutes to bloom.
  2. Make the Sugar Syrup: In a medium saucepan, combine granulated sugar, light corn syrup, water, and salt. Stir until moistened.
  3. Cook the Syrup: Place the saucepan over medium heat. Clip a candy thermometer to the side, ensuring it doesn’t touch the bottom. Cook without stirring until the syrup reaches the soft-ball stage (235-240°F or 113-116°C). Brush down any sugar crystals on the sides of the pan with a wet pastry brush.
  4. Whip the Egg Whites: While the syrup is cooking, beat the room temperature egg whites in a clean, grease-free bowl with an electric mixer on medium speed until soft peaks form.
  5. Stiff Peaks: Gradually increase the mixer speed to high and continue beating until stiff, glossy peaks form. Be careful not to overwhip.
  6. Combine Mixtures: Once the sugar syrup reaches the soft-ball stage, immediately remove it from the heat.
  7. Pour Syrup: With the mixer running on medium speed, slowly and steadily pour the hot sugar syrup into the whipped egg whites in a thin stream. Avoid pouring directly onto the beaters.
  8. Beat: Continue to beat the mixture on medium speed for about 5-7 minutes, or until it becomes thick, glossy, and holds its shape.
  9. Add Jell-O: Add the bloomed Jell-O mixture to the bowl. Beat on medium speed until fully incorporated and evenly colored.
  10. Fold in Nuts: Gently fold in the chopped nuts. Be careful not to overmix.
  11. Prepare Dish: Line a 9×13 inch baking dish with parchment paper. Lightly grease the parchment paper with butter or cooking spray.
  12. Pour and Set: Pour the divinity mixture into the prepared baking dish. Spread evenly with a spatula. Dust the top generously with powdered sugar.
  13. Set: Let the divinity set at room temperature for at least 2-3 hours, or preferably overnight, until firm.
  14. Cut and Store: Once set, lift the divinity out of the dish using the parchment paper. Cut into squares or rectangles with a sharp knife (dust the knife with powdered sugar to prevent sticking). Dust the cut pieces with more powdered sugar. Store in an airtight container at room temperature.

  • Flavor Variations: Experiment with different Jell-O flavors, food coloring, or extracts (peppermint).
  • Nut Variations: Use any type of nuts or add dried fruits. Toasting the nuts will add a richer flavor.
