This Lazy Man’s Peach Cobbler is an easy and delicious dessert featuring juicy peaches topped with a buttery, cake-like layer. Ideal for summer gatherings, it’s best enjoyed warm with vanilla ice cream or whipped cream.

  • 4 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: whipped cream or vanilla ice cream for serving

Instructions

  1. Start by washing the peaches thoroughly under cold water.
  2. Using a sharp knife, slice the peaches in half and remove the pit. Then, peel the skin off. If you find it difficult to peel, you can blanch them in boiling water for about 30 seconds, then transfer them to an ice bath to make peeling easier.
  3. Once peeled, slice the peaches into thin wedges and place them in a large mixing bowl.
  4. Add 1 cup of granulated sugar, 1 teaspoon of ground cinnamon, and 1 tablespoon of lemon juice to the bowl with the peaches. Gently toss everything together until the peaches are well coated. Set this mixture aside to let the flavors meld while we prepare the batter.
  5. In a separate mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk these dry ingredients together until they are well mixed.
  6. In another bowl, mix together 1 cup of milk, 1/2 cup of melted unsalted butter, and 1 teaspoon of vanilla extract. Stir until everything is combined.
  7. Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  8. Preheat your oven to 350°F (175°C). While the oven is heating, grab a 9×13-inch baking dish and grease it lightly with butter or non-stick spray.
  9. Pour the peach mixture into the bottom of the greased baking dish, spreading it out evenly.
  10. Next, gently pour the batter over the peaches. Do not stir; just let the batter sit on top of the peaches. It will spread out as it bakes, creating a delicious cobbler topping.
  11. If you like, you can sprinkle a little extra cinnamon on top for added flavor.
  12. Place the baking dish in the preheated oven and bake for about 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  13. Keep an eye on it during the last few minutes of baking to ensure it doesn’t over-brown. If the top is browning too quickly, you can cover it loosely with aluminum foil.
  14. Once baked, remove the cobbler from the oven and let it cool for about 10-15 minutes. This will help the juices settle and make it easier to serve.
  15. Using a large spoon or spatula, scoop out portions of the cobbler, making sure to get both the peach filling and the batter.
  16. Serve warm, and if you’re feeling indulgent, top each serving with a generous scoop of vanilla ice cream or a dollop of whipped cream. The cold creaminess pairs perfectly with the warm cobbler.
