Lemon Cake Dessert: A Refreshing Treat for Every Occasion

  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk, at room temperature
  • 3 large eggs, at room temperature
  • 1 tablespoon lemon zest (from about 2 lemons)
  • ½ cup fresh lemon juice (about 23 lemons)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting (optional)
  • Fresh berries, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Beat together on medium speed until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting with a third of the dry ingredients, mixing until just combined, then adding half of the buttermilk. Repeat until all ingredients are incorporated, being careful not to overmix.
  6. Fold in the lemon zest and fresh lemon juice.
  7. Grease two 9-inch round cake pans with butter and lightly dust with flour.
  8. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs.
  10. Remove from the oven and let the cakes cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
  11. In a small bowl, whisk together 1 cup of powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth. Adjust the consistency with more powdered sugar for thickness or more lemon juice for a thinner glaze.
  12. Place one cake layer on a serving plate or cake stand.
  13. Optionally, spread a thin layer of lemon frosting or whipped cream on top of the first layer.
  14. Carefully place the second cake layer on top and gently press down to secure.

  • For added flavor, consider adding a layer of lemon frosting between the cake layers.
  • Dust the top with powdered sugar and garnish with fresh berries for a beautiful presentation.
