Mango Coconut Overnight Oats: A Delicious & Easy Recipe

  • 1 cup rolled oats (not instant)
  • 1 ½ cups unsweetened coconut milk (canned or carton)
  • ¼ cup Greek yogurt (plain or vanilla)
  • 2 tablespoons chia seeds
  • 1 tablespoon shredded coconut (unsweetened)
  • 1 tablespoon maple syrup (or honey, agave)
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 ripe mango, peeled and diced (about 1 cup)
  • Optional toppings: extra shredded coconut, chopped nuts (almonds, cashews), more diced mango

Instructions

  1. Combine Dry Ingredients: In a medium bowl or jar, mix rolled oats, chia seeds, shredded coconut, and salt.
  2. Add Wet Ingredients: Pour in coconut milk, Greek yogurt, maple syrup, and vanilla extract.
  3. Mix Thoroughly: Stir until all ingredients are well combined and no clumps remain.
  4. Taste and Adjust: Add more maple syrup/honey to taste, if desired.
  5. Add Mango: Gently fold in ¾ of the diced mango, reserving the rest for topping.
  6. Refrigerate: Cover and refrigerate for at least 4 hours, or preferably overnight.
  7. Check Consistency: In the morning, stir and add a splash of coconut milk/water if too thick.
  8. Add Toppings: Spoon into a bowl or keep in the jar. Top with remaining mango, shredded coconut, and any other desired toppings.
  9. Enjoy: Serve cold and enjoy!
