Total Time:35 minutes
Yield:4 servings 1x
Ingredients
Scale
4 cups water, divided
4 black tea bags (or 4 tablespoons loose leaf black tea)
2 ripe mangoes, peeled and cubed
1/2 cup granulated sugar (adjust to taste)
1/4 cup lemon juice, freshly squeezed
Ice cubes, for serving
Optional garnishes: Mango slices, mint sprigs, lemon wedges
Instructions
In a medium saucepan, combine the cubed mangoes and 1 cup of water.
Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it simmer for about 10-15 minutes, or until the mangoes are very soft and easily mashed.
Remove the saucepan from the heat and use a potato masher or the back of a spoon to thoroughly mash the mangoes.
Place a fine-mesh sieve over a bowl. Pour the mashed mango mixture into the sieve. Use a spoon to press the mango pulp against the sieve, extracting as much of the juice and pulp as possible. Discard the remaining solids in the sieve.
Return the strained mango juice to the saucepan. Add the sugar and lemon juice.
Place the saucepan back over medium heat. Stir constantly until the sugar is completely dissolved (3-5 minutes).
Remove the saucepan from the heat and let the mango syrup cool completely.
Once cooled, transfer the mango syrup to an airtight container or jar. Store in the refrigerator for up to a week.
Bring the remaining 3 cups of water to a boil.
Place the black tea bags (or loose leaf tea in a tea infuser) in a heatproof pitcher or teapot. Pour the boiling water over the tea bags.
Let the tea steep for 3-5 minutes, depending on your desired strength.
Remove the tea bags (or tea infuser) from the pitcher. Squeeze the tea bags gently to extract all the flavor.
Let the brewed tea cool to room temperature.
In a large pitcher, combine the cooled black tea and the cooled mango syrup.
Stir well to ensure the syrup is evenly distributed throughout the tea.
Taste the tea and adjust the sweetness as needed.
Refrigerate the mango iced tea for at least 30 minutes to allow the flavors to meld together.
Fill glasses with ice cubes.
Pour the chilled mango iced tea over the ice. Garnish with mango slices, mint sprigs, and lemon wedges, if desired.
Serve immediately.
Notes
You can also use green tea, white tea, or herbal tea.
Different varieties of mangoes will have slightly different flavors.
Add a pinch of ground ginger or a cinnamon stick to the mango syrup while it’s simmering.
Top off each glass with sparkling water or club soda.
Combine equal parts mango iced tea and lemonade.
Blend the mango iced tea with ice for a frozen slushy treat.
Instead of granulated sugar, you can use honey, agave nectar, or maple syrup.
The mango syrup and brewed tea can be made ahead of time and stored separately in the refrigerator.
If you want a stronger mango flavor, use more mangoes when making the syrup.
While the recipe calls for lemon juice, you can also use lime juice.
If your iced tea is too sweet, add more lemon juice or water.
If your iced tea is not sweet enough, add more mango syrup or a little extra sugar.
If your tea is bitter, try steeping it for a shorter amount of time next time.
If your mango syrup is too thick, add a little water to thin it out.
If your mango syrup is too thin, simmer it for a longer amount of time to reduce the liquid.
