  • 1 teaspoon onion powder

  • 1/2 cup green onions, chopped (for garnish)

Instructions

  1. Start by washing and peeling the russet potatoes. A vegetable peeler works best for this task.
  2. Cut the potatoes into even-sized cubes, about 1 to 2 inches, to ensure even cooking.
  3. Place the cubed potatoes into a large pot and cover them with cold water. Add a generous pinch of salt to the water.
  4. Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until fork-tender.
  5. Drain the potatoes in a colander and let them sit for a minute to allow excess moisture to evaporate.
  6. Transfer the drained potatoes back into the pot or a large mixing bowl.
  7. Add the softened butter to the hot potatoes, allowing the heat to melt it.
  8. Mix in the sour cream and milk. Whole milk is preferred for a creamier texture.
  9. Sprinkle in the garlic powder, onion powder, and a good amount of salt and pepper. Adjust seasoning to taste.
  10. Using a potato masher or hand mixer, mash the potatoes until you reach your desired consistency.
  11. Fold in the shredded cheddar cheese and grated Parmesan cheese until melted and well combined.
  12. Preheat your oven to 350°F (175°C).
  13. Grease a 9×13-inch baking dish with butter or cooking spray.
  14. Transfer the mashed potato mixture into the prepared baking dish, spreading it out evenly.
  15. If desired, sprinkle breadcrumbs over the top for a crunchy texture.
  16. Optionally, add more shredded cheddar cheese on top of the breadcrumbs.
  17. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and edges are bubbling.
  18. Monitor the casserole during the last few minutes to prevent over-browning. Cover loosely with aluminum foil if necessary.
