Mexican Pizza: The Ultimate Recipe and Toppings Guide

Crispy homemade Mexican Pizza with seasoned ground beef, refried beans, and taco toppings!

  • 1 teaspoon sugar
  • 1 package (2 1/4 teaspoons) active dry yeast
  • 3/4 cup warm water (105-115°F)
  • 2 tablespoons olive oil, plus more for greasing
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 (16 ounce) can refried beans
  • 1/4 cup water (or more, to thin as needed)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • Sour cream, for serving (optional)
  • Hot sauce, for serving (optional)

Instructions

  1. In a large bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes, or until foamy.
  2. In a separate bowl, whisk together the flour and salt.
  3. Add the olive oil to the yeast mixture. Then, gradually add the dry ingredients to the wet ingredients, mixing with a wooden spoon or your hands until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until it becomes smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
  5. Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon as it cooks. Drain off any excess grease.
  7. Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5-7 minutes.
  8. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-10 minutes, or until the sauce has thickened slightly. Taste and adjust seasonings as needed.
  9. In a small saucepan over low heat, combine the refried beans and water. Stir until smooth and heated through. Add more water if needed to achieve a spreadable consistency.
  10. Preheat your oven to 450°F (232°C). Place a pizza stone or baking sheet in the oven while it preheats.
  11. Punch down the risen dough to release the air. Divide the dough in half.
  12. On a lightly floured surface, roll out one portion of the dough into a thin circle, about 12 inches in diameter.
  13. Carefully transfer the rolled-out dough to a piece of parchment paper.
  14. Use a fork to prick the dough all over.
  15. Carefully slide the parchment paper with the dough onto the preheated baking sheet or pizza stone. Bake for 8-10 minutes, or until the crust is lightly golden brown.
  16. Repeat steps 3-6 with the remaining dough.
  17. Remove the baked crust from the oven. Spread a thin, even layer of refried beans over the entire surface of each crust.
  18. Top the refried beans with the ground beef mixture, dividing it evenly between the two pizzas.
  19. Sprinkle the cheddar and Monterey Jack cheeses over the ground beef.
  20. Return the pizzas to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  21. Remove the pizzas from the oven and let them cool slightly. Top with chopped tomatoes, sliced black olives, and chopped green onions.
  22. Slice the Mexican pizzas into wedges and serve immediately. Offer sour cream and hot sauce on the side.
