  • 1 cup almond butter (or peanut butter)
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup chopped nuts (walnuts, almonds, or pecans)
  • 1/2 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, chopped nuts, cocoa powder, and salt. Stir until evenly mixed.
  2. In a separate bowl, mix the almond butter and honey (or maple syrup). If the almond butter is stiff, microwave it for 15-20 seconds to soften. Add the vanilla extract and stir until well combined.
  3. Pour the wet mixture into the dry mixture. Using a spatula or your hands, mix until all dry ingredients are fully coated and the mixture is sticky.
  4. If using mini chocolate chips, fold them into the mixture now.
  5. Line an 8×8 inch (or 9×9 inch) square baking dish with parchment paper.
  6. Transfer the mixture into the lined baking dish. Press it down firmly and evenly using a spatula or your hands.
  7. Use the back of a measuring cup to compact the mixture further.
  8. Cover the baking dish with plastic wrap or foil and refrigerate for at least 2 hours to firm up.
  9. Remove the baking dish from the refrigerator and lift the nut squares out using the parchment paper.
  10. Place on a cutting board and cut into squares or rectangles as desired.
  11. Serve immediately or store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.

  • These squares are versatile; feel free to add dried fruits, seeds, or swap the nut butter for your favorite variety.
  • For a sweeter treat, increase the amount of honey or maple syrup.
