Peach Orange Lemongrass Iced Tea: Refreshing Summer Recipe

Refreshing homemade iced tea infused with peach, orange, and lemongrass. Perfect for summer!

  • 6 ripe peaches, pitted and roughly chopped
  • 2 large oranges, peeled and segmented, seeds removed
  • 3 stalks lemongrass, bruised
  • 1 cup granulated sugar (adjust to taste)
  • 8 cups water, divided
  • 1 lemon, thinly sliced
  • Ice cubes, for serving
  • Optional garnishes: fresh mint sprigs, peach slices, orange slices

Instructions

  1. Combine the fruit and lemongrass: In a large saucepan, combine the chopped peaches, orange segments, and bruised lemongrass stalks.
  2. Add water and sugar: Pour in 4 cups of water and add the granulated sugar. Stir well to ensure the sugar begins to dissolve.
  3. Bring to a simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer.
  4. Simmer and infuse: Reduce the heat to low and let the mixture simmer gently for about 30-40 minutes, stirring occasionally.
  5. Strain the syrup: Remove the saucepan from the heat and let the mixture cool slightly for about 10-15 minutes. Place a fine-mesh sieve or a cheesecloth-lined colander over a large bowl. Carefully pour the peach-orange-lemongrass mixture into the sieve, allowing the syrup to drain into the bowl. Use a spoon or spatula to gently press on the solids to extract as much syrup as possible. Discard the solids.
  6. Adjust sweetness (if needed): Taste the syrup. If it’s not sweet enough for your liking, you can add a little more sugar, a tablespoon at a time, and stir until dissolved.
  7. Cool completely: Let the syrup cool completely to room temperature. You can speed up the cooling process by placing the bowl of syrup in an ice bath.
  8. Heat the water: In a separate saucepan, bring the remaining 4 cups of water to a boil.
  9. Add lemon slices: Once the water is boiling, remove it from the heat and add the thinly sliced lemon.
  10. Steep the lemon: Let the lemon slices steep in the hot water for about 10-15 minutes.
  11. Remove the lemon slices: After steeping, remove the lemon slices from the water and discard them.
  12. Cool the tea base: Let the lemon-infused water cool to room temperature. You can also refrigerate it to speed up the cooling process.
  13. Combine syrup and tea base: In a large pitcher, combine the cooled peach-orange-lemongrass syrup and the cooled lemon-infused water. Stir well to ensure the syrup is evenly distributed.
  14. Adjust the concentration: Taste the iced tea. If it’s too strong, add more water to dilute it. If it’s not flavorful enough, add a little more of the peach-orange-lemongrass syrup.
  15. Chill the iced tea: Refrigerate the iced tea for at least 2 hours, or preferably overnight, to allow the flavors to meld together even further.
  16. Serve and garnish: When you’re ready to serve, fill glasses with ice cubes. Pour the chilled peach-orange-lemongrass iced tea over the ice. Garnish with fresh mint sprigs, peach slices, and/or orange slices, if desired.

Notes

  • Use ripe fruit: The riper the peaches and oranges, the more flavorful your syrup will be.
  • Adjust the sweetness: The amount of sugar in this recipe is just a guideline. Feel free to adjust it to your liking. You can also use a sugar substitute, such as honey or agave nectar, if you prefer.
  • Add other fruits: Feel free to experiment with other fruits, such as raspberries, strawberries, or blueberries. Just add them to the saucepan along with the peaches and oranges.
  • Use different herbs: If you’re not a fan of lemongrass, you can try using other herbs, such as ginger, rosemary, or thyme.
  • Make it sparkling: For a fizzy twist, top off each glass of iced tea with sparkling water or club soda.
  • Add alcohol: For an adult version, add a shot of vodka, rum, or gin to each glass.
  • Storage: The peach-orange-lemongrass iced tea can be stored in the refrigerator for up to 3 days.
