1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
1/2 cup milk
1/2 cup unsweetened cocoa powder
3 cups quick-cooking oats
1 cup creamy peanut butter
1 teaspoon vanilla extract
Pinch of salt
Instructions
In a large saucepan, combine the softened butter, granulated sugar, and milk.
Place the saucepan over medium heat. Stir the mixture constantly until the butter is completely melted and the sugar is dissolved (3-5 minutes).
Bring the mixture to a rolling boil, stirring constantly.
Set a timer for exactly 1 minute and continue to boil the mixture, stirring constantly.
Remove the saucepan from the heat immediately.
Add the cocoa powder to the hot mixture. Stir vigorously until the cocoa powder is fully incorporated and the mixture is smooth.
Add the creamy peanut butter to the chocolate mixture. Stir until the peanut butter is completely melted and evenly distributed.
Stir in the vanilla extract and the pinch of salt.
Add the quick-cooking oats to the mixture. Stir until the oats are completely coated with the chocolate-peanut butter mixture.
Continue stirring until everything is well combined and the mixture starts to thicken slightly (1-2 minutes).
Line a baking sheet with parchment paper or wax paper.
Using a spoon or a cookie scoop, drop rounded tablespoons of the cookie mixture onto the prepared baking sheet.
Let the cookies cool and set completely at room temperature (30-60 minutes). You can speed up the process by placing the baking sheet in the refrigerator for about 15-20 minutes.
Once the cookies are firm and set, they are ready to enjoy! Store them in an airtight container at room temperature for up to a week.
Notes
Adjusting Sweetness: Reduce sugar by 1/4 cup for less sweetness.
Peanut Butter Variations: Use chunky or natural peanut butter (stir well if using natural).
