  • 1/4 teaspoon vanilla extract

Instructions

  1. Combine Oats and Milk: In a small saucepan, combine the rolled oats and milk.
  2. Cook the Oats: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent the oats from sticking to the bottom.
  3. Simmer Until Softened: Continue to simmer for about 5-7 minutes, or until the oats have softened and the milk has thickened slightly. You’re looking for a porridge-like consistency. Don’t overcook them, or they’ll become too mushy.
  4. Remove from Heat: Once the oats are cooked, remove the saucepan from the heat and let it cool slightly for a minute or two. This will prevent the blender from overheating when we add the hot coffee.
  5. Add Ingredients to Blender: Carefully pour the cooked oat and milk mixture into a blender.
  6. Add Coffee: Pour in the brewed coffee. Make sure it’s still hot, as this will help everything blend together nicely.
  7. Add Peanut Butter: Add the peanut butter to the blender.
  8. Add Sweetener: Pour in the maple syrup (or your sweetener of choice). Adjust the amount to your liking, depending on how sweet you prefer your latte.
  9. Add Vanilla Extract and Salt: Add the vanilla extract and a pinch of salt.
  10. Blend Until Smooth: Secure the lid on the blender and blend on high speed until the mixture is completely smooth and creamy. This should take about 30-60 seconds, depending on the power of your blender. Make sure there are no lumps of oats or peanut butter remaining.
