Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard 12-cup muffin tin with non-stick spray or line it with paper liners.
  3. In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt until well combined.
  4. In another bowl, whisk together the melted butter, eggs, vanilla extract, corn syrup, and heavy cream until smooth.
  5. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula, being careful not to overmix.
  6. Fold in the chopped pecans until just combined.
  7. Fill each muffin cup about 3/4 full with the batter.
