  • 1 cup coconut milk
  • 1 cup pineapple juice
  • 1 ripe banana
  • 1/2 cup crushed pineapple (drained)
  • 1/4 cup shredded coconut (toasted, optional)
  • 1 tablespoon sugar (optional, adjust to taste)
  • Whipped cream (for topping)
  • Maraschino cherries (for garnish)
  • Fresh pineapple slices (for garnish)

Instructions

  1. In a blender, add the 2 cups of vanilla ice cream.
  2. Pour in 1 cup of coconut milk.
  3. Add 1 cup of pineapple juice.
  4. Peel and slice the ripe banana, and toss it into the blender.
  5. Add the 1/2 cup of crushed pineapple (drained).
  6. Secure the lid on the blender tightly.
  7. Start blending on low speed, then gradually increase to high speed until smooth and creamy (about 30 seconds to 1 minute).
  8. If too thick, add more coconut milk or pineapple juice to reach desired consistency.
  9. Taste and add optional sugar if desired, then blend again.
  10. Preheat your oven to 350°F (175°C) if using shredded coconut.
  11. Spread shredded coconut on a baking sheet and bake for 5-7 minutes, stirring occasionally, until golden brown.
  12. Let it cool, then add to the blender and pulse a few times to incorporate.
  13. Pour the milkshake into tall glasses, filling them about three-quarters full.
  14. Top with whipped cream, a Maraschino cherry, and a slice of fresh pineapple.
  15. Sprinkle any remaining toasted coconut on top for added texture.
