Instructions
Prepare the Pineapple Base: Chop the pineapple into 1-inch pieces. In a saucepan, combine pineapple, sugar, water, lime juice, and salt.
Cook the Pineapple Mixture: Bring to a simmer over medium heat, stirring occasionally. Reduce heat to low and cook for 15-20 minutes, until pineapple is softened and mixture has thickened.
Cool and Blend: Remove from heat and let cool completely. Transfer to a blender and blend until smooth.
Strain (Optional): For a smoother texture, strain the puree through a fine-mesh sieve.
Infuse Coconut Water: In a pitcher, combine coconut water and shredded coconut. Add vanilla extract (if using).
Steep: Cover and refrigerate for at least 1 hour (up to 4 hours) to infuse the coconut flavor.
Strain: Strain the coconut water through a fine-mesh sieve or cheesecloth to remove the shredded coconut.
Combine: Pour the pineapple base into the pitcher of coconut-infused water. Stir well. Taste and adjust sweetness if needed.
Chill: Refrigerate for at least 30 minutes to allow flavors to meld.
Serve: Fill glasses with ice. Pour the pineapple coconut water over the ice. Garnish with fresh mint sprigs and lime wedges.
Adult Version (Optional): Add 1/4 cup of white rum or vodka to each serving. Stir well before serving.

Choose a ripe pineapple for the best flavor.
Fresh coconut water from young coconuts is ideal, but good quality store-bought coconut water works well too.
