Enjoy a refreshing Pink Coconut Iced Latte, featuring a delightful mix of brewed coffee, creamy coconut milk, and vibrant pink syrup. This visually stunning drink is perfect for warm days, offering a burst of tropical flavor that coffee lovers will adore.

Ingredients

Scale
  • 1 cup of brewed coffee (cooled)
  • 1 cup of coconut milk (canned or carton)
  • 1/4 cup of pink syrup (such as raspberry or strawberry syrup)
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of sweetened condensed milk (optional, for extra sweetness)
  • Ice cubes
  • Shredded coconut (for garnish)
  • Fresh raspberries or strawberries (for garnish, optional)

Instructions

  1. Brew your favorite coffee (about 1 cup) and let it cool to room temperature. For quicker cooling, place it in the fridge. Optionally, add 1/2 teaspoon of vanilla extract to the cooled coffee for added flavor.
  2. In a bowl or measuring cup, combine the coconut milk and pink syrup. If using canned coconut milk, shake or stir well to mix. Add 1 tablespoon of vanilla extract and sweetened condensed milk (if desired). Stir until well combined.
  3. Fill a tall glass halfway with ice cubes. Pour the cooled coffee over the ice, filling the glass about halfway. Gently pour the pink coconut mixture over the coffee to create a layered effect. Use a spoon to guide the mixture down the side of the glass if needed.
  4. Sprinkle shredded coconut on top for texture and a tropical flair. Optionally, add fresh raspberries or strawberries for extra color and flavor.
  5. Serve immediately with a straw or spoon. Enjoy this drink on a sunny afternoon or as a refreshing treat after a long day. For make-ahead convenience, prepare the coffee and coconut mixture separately and store in the fridge until ready to assemble.

Notes

  • Experiment with different flavors of syrup for a unique twist.
  • For a more indulgent version, add a scoop of vanilla ice cream or whipped cream on top.
  • Ensure sweetened condensed milk is plant-based for a dairy-free option.
  • Use espresso for a stronger coffee flavor, adjusting the amount to taste.
  • Add a sprinkle of cinnamon or nutmeg for a warm spice note.
  • For a lower-calorie option, use unsweetened coconut milk and skip the sweetened condensed milk.
