Yield:2 servings 1x
Ingredients
Scale
1 cup Freeze-Dried Strawberries
2 cups Unsweetened Coconut Milk (carton, not canned)
1 cup White Grape Juice
1/4 cup Water
1–2 tablespoons Agave Nectar or Simple Syrup (optional)
Ice
Optional Garnishes: Fresh strawberries, mint sprig, lime wedge
Instructions
In a small bowl, combine the freeze-dried strawberries with the 1/4 cup of water. Let them sit for about 5-10 minutes, allowing them to soften and rehydrate.
Transfer the hydrated strawberries and the pink-tinted water to a blender. Blend on high speed until you have a smooth, slightly thick puree. Scrape down the sides as needed.
For a smoother drink, strain the strawberry puree through a fine-mesh sieve to remove seeds. Press the puree through the sieve with a spoon or spatula.
In a large pitcher or individual glasses, combine the coconut milk, white grape juice, and the strawberry puree (strained or unstrained). Stir well.
Taste the Pink Drink and add agave nectar or simple syrup, if desired. Start with 1 tablespoon and add more to your liking.
Fill your glasses with ice.
Pour the Pink Drink mixture over the ice in your glasses.
Garnish with fresh strawberries, a sprig of mint, or a lime wedge.
Notes
For the best flavor, use high-quality freeze-dried strawberries.
Unsweetened coconut milk from a carton is recommended for a smoother texture.
Adjust sweetness to your preference.
Experiment with different freeze-dried fruits, citrus, or sparkling water for variations.
For a thicker drink, add a frozen banana or ice cubes to the blender.
The strawberry puree can be frozen in ice cube trays for later use.
