4 cups chopped fresh rhubarb
2 cups granulated sugar
1 cup water
1 teaspoon vanilla extract
6 ounces tequila blanco (silver)
3 ounces fresh lime juice
3 ounces rhubarb syrup (recipe above)
6 ounces Mexican lager beer (such as Corona or Modelo)
Lime wedges, for garnish
Coarse salt or sugar, for rimming the glasses (optional)

Instructions
Combine rhubarb, sugar, and water in a medium saucepan.
Bring to a boil over medium-high heat, stirring occasionally.
Reduce heat to low and simmer for 15-20 minutes, or until rhubarb is very soft and broken down.
Strain the mixture through a fine-mesh sieve or cheesecloth-lined colander into a heat-proof bowl. Press on the solids to extract as much syrup as possible. Discard the pulp.
Stir in vanilla extract.
Cool completely before using. Store in an airtight container in the refrigerator for up to 2 weeks.
(Optional) Prepare glasses by rimming with salt or sugar.
In a cocktail shaker, combine tequila, lime juice, and rhubarb syrup.
Add ice to the shaker.
Shake vigorously for 15-20 seconds.
Fill prepared glasses with ice.
Strain the margarita mixture into the glasses, dividing evenly.
Top each margarita with 3 ounces of Mexican lager beer.
Garnish with a lime wedge and serve immediately.
Notes
For a spicy margarita, add a slice or two of jalapeño to the cocktail shaker.
