1 teaspoon lemon juice
Fresh mint leaves, for garnish
Balsamic glaze, for drizzling
Chia seeds or hemp seeds, for sprinkling
Instructions
Prepare the Berry Compote (Optional): In a small saucepan, combine the mixed berries, honey, and lemon juice. Cook over medium heat, stirring occasionally, until the berries have softened and released their juices, and the sauce has thickened slightly (about 5-7 minutes). Taste and adjust sweetness if needed. Let cool slightly.
Make the Ricotta Base:** In a medium bowl, combine the ricotta cheese, heavy cream, honey, vanilla extract, and salt. Mix until smooth and creamy, being careful not to overmix. Taste and adjust sweetness if needed. Set aside.
Toast the Bread:** Lightly brush both sides of each slice of bread with olive oil (or melted butter). Toast in a toaster, skillet (2-3 minutes per side), or oven (375°F/190°C for 5-7 minutes) until golden brown and crispy. Let cool slightly.
Assemble the Ricotta Toast:** Generously spread the creamy ricotta base over each slice of toasted bread. Spoon the berry compote (or fresh berries) over the ricotta base.
Garnish (Optional): Garnish with fresh mint leaves, a drizzle of balsamic glaze, and/or a sprinkle of chia seeds or hemp seeds.
