Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
  2. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes, being careful not to burn them.
  3. Season the chicken thighs with salt and pepper, then add them to the pot. Sear for about 5 minutes on each side until golden brown.
  4. Pour in the soy sauce, oyster sauce, rice vinegar, and sugar, stirring to coat the chicken evenly.
