Spicy Beef Noodle Stir Fry: A Flavorful Recipe for Quick Weeknight Dinners

This stir-fried beef noodle dish features tender beef sirloin, fresh vegetables, and savory sauces, all tossed with egg or rice noodles for a quick and satisfying meal. Perfect for busy weeknights!

  • 8 oz (225g) fresh egg noodles or rice noodles
  • 1 lb (450g) beef sirloin, thinly sliced against the grain
  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon chili paste (adjust to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Start by boiling a large pot of water. Once it reaches a rolling boil, add the fresh egg noodles or rice noodles. Cook according to the package instructions, usually around 3-5 minutes for fresh noodles.
  2. Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. This will also help prevent them from sticking together. Set aside.
  3. While the noodles are cooking, take your thinly sliced beef sirloin and place it in a bowl.
  4. Add 1 tablespoon of soy sauce, a pinch of salt, and a dash of pepper to the beef. Mix well to ensure all the slices are coated. Let it marinate for about 10-15 minutes.
  5. While the beef is marinating, prepare your vegetables. Slice the onion, red bell pepper, and carrot. Cut the broccoli into small florets. Mince the garlic and chop the green onions, setting them aside for later use.
  6. In a large wok or a non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Make sure the oil is hot before adding the beef.
  7. Add the marinated beef to the hot oil in a single layer. Let it sear for about 2-3 minutes without stirring.
  8. After 2-3 minutes, stir the beef to cook it evenly. Cook for an additional 2-3 minutes until the beef is browned and cooked through. Remove the beef from the pan and set it aside on a plate.
  9. In the same wok or skillet, add another tablespoon of vegetable oil if needed. Add the sliced onion and minced garlic, stirring for about 30 seconds until fragrant.
  10. Add the sliced red bell pepper, broccoli florets, and julienned carrot to the pan. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
  11. Once the vegetables are cooked, return the beef to the pan. Stir everything together to combine.
  12. Now it’s time to add the cooked noodles to the stir-fry. Gently toss the noodles with the beef and vegetables, ensuring everything is well mixed.
  13. Add 1 tablespoon of oyster sauce, 1 tablespoon of chili paste, and 1 teaspoon of sesame oil to the mixture. Toss everything together until the noodles are evenly coated with the sauce. Adjust the seasoning with salt and pepper to taste.
  14. Continue to stir-fry for another 2-3 minutes, allowing the flavors to meld together and the noodles to heat through.
  15. Once everything is heated through and well combined, remove the pan from the heat.
  16. Garnish with chopped green onions and sprinkle sesame seeds on top if desired.
