Ingredients

Scale
  • 1.5 pounds of boneless, skinless chicken thighs
  • 4 tablespoons of olive oil
  • 6 cloves of garlic, minced
  • 2 tablespoons of fresh ginger, minced
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of chili paste (adjust to taste)
  • 1 teaspoon of sesame oil
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1 tablespoon of cornstarch
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a large mixing bowl, combine the minced garlic and ginger.
  2. Add the soy sauce, rice vinegar, honey, chili paste, sesame oil, black pepper, and salt. Whisk until well combined.
  3. In a small bowl, mix the cornstarch with a tablespoon of water to create a slurry. Add this to the marinade and mix well.
  4. Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring each piece is well coated.
  5. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or longer for enhanced flavor.
  6. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  7. Add the marinated chicken pieces to the skillet in a single layer, cooking in batches if necessary.
  8. Cook for about 5-7 minutes on one side until golden brown, then flip and cook for another 5-7 minutes until cooked through (internal temperature should reach 165°F/75°C).
  9. Remove the chicken from the skillet and keep warm under aluminum foil.
  10. In the same skillet, add the remaining 2 tablespoons of olive oil and scrape up any bits stuck to the bottom.
  11. Add any leftover marinade and bring to a simmer over medium heat.
  12. Let the sauce simmer for 3-5 minutes to thicken. If desired, add more cornstarch slurry to reach your preferred consistency.
  13. Return the cooked chicken to the skillet and toss until well coated in the sauce.
  14. Prepare serving plates or a large platter.
  15. Transfer the spicy garlic chicken onto the plates, drizzling with sauce.
  16. Garnish with chopped green onions and sesame seeds.
  17. Serve immediately with steamed rice or noodles.
