Refreshing, healthy, sugar-free watermelon agua fresca for hot days! Sweet watermelon and lime create a delicious, hydrating drink.

  • 8 cups cubed seedless watermelon
  • 4 cups cold water, plus more to adjust consistency
  • 1/4 cup lime juice, freshly squeezed (about 23 limes)
  • 1/4 cup erythritol or your preferred sugar-free sweetener (adjust to taste)
  • Pinch of salt
  • Fresh mint sprigs, for garnish (optional)
  • Lime wedges, for garnish (optional)
  • Ice cubes, for serving

Instructions

  1. Prepare the Watermelon: Select a ripe, seedless watermelon. Cut into manageable pieces and then cube, removing any remaining seeds. Aim for roughly 8 cups of cubed watermelon.
  2. Blend the Watermelon: Transfer the cubed watermelon to a high-powered blender. Add 2 cups of the cold water to the blender.
  3. Blend Until Smooth: Blend the watermelon and water mixture until completely smooth (about 1-2 minutes).
  4. Strain (Optional): For a smoother agua fresca, strain the watermelon puree through a fine-mesh sieve or cheesecloth-lined colander. Discard the pulp.
  5. Combine: In a large bowl, add the remaining 2 cups of cold water and the freshly squeezed lime juice to the strained (or unstrained) watermelon puree.
  6. Sweeten: Add the erythritol (or your preferred sugar-free sweetener) to the mixture. Start with 1/4 cup and stir well until dissolved. Taste and adjust sweetness as needed. Add a pinch of salt.
  7. Adjust Consistency: If the agua fresca is too thick, add more cold water, a little at a time, until you reach your desired consistency.
  8. Chill: Cover the bowl or transfer to a pitcher and refrigerate for at least 2 hours, or preferably longer, to chill thoroughly.
  9. Prepare Glasses: Get your serving glasses ready. You can chill them in the freezer for a few minutes for an extra refreshing touch.
  10. Add Ice: Fill each glass with ice cubes.
  11. Pour and Garnish: Pour the chilled sugar-free watermelon agua fresca over the ice in each glass. Garnish with fresh mint sprigs and lime wedges, if desired.
  12. Serve: Serve immediately and enjoy!

  • Sweetener Alternatives: Use stevia, monk fruit sweetener, or allulose instead of erythritol. Adjust the amount to taste.
