  • 1/4 cup passion fruit pulp (fresh or frozen)
  • 1 tablespoon shredded coconut (unsweetened)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 tablespoon honey or agave nectar (adjust to taste)

Instructions

  1. Prepare the Berry Base: In a high-powered blender, combine the frozen mixed berries, mango chunks, and pineapple chunks. Add the orange juice, lime juice, and honey or agave nectar. Blend on low speed, gradually increasing to high, scraping down the sides as needed. Add water gradually until desired consistency is reached. Taste and adjust sweetness/tartness as needed. Chill if desired.
  2. Prepare the Tropical Layer: In a separate blender, combine the coconut milk, pineapple juice, passion fruit pulp, shredded coconut, vanilla extract, lime juice, and honey or agave nectar. Blend on high speed until smooth and creamy. Taste and adjust sweetness/tartness as needed. Chill if desired.
  3. Assemble the Tropical Berry Splash: Select your glasses. Pour the berry base into the glasses, filling them about halfway. Gently pour the tropical mixture over the berry base, pouring slowly over the back of a spoon to prevent mixing.
  4. (Optional) Create a Swirl: Use a skewer or thin knife to gently swirl the layers together, being careful not to over-mix.
  5. Garnish: Garnish with fresh berries, pineapple wedges, mango slices, lime wedges, shredded coconut, and mint sprigs.
