  3. If using a microwave, heat the chocolate in 30-second intervals, stirring in between, until melted (about 1 to 2 minutes).
  4. For a double boiler, fill the bottom pot with water and bring it to a simmer. Place the bowl with the chocolate on top, ensuring it doesn’t touch the water. Stir continuously until melted and smooth.
  5. Remove the bowl from heat and let it cool slightly, ensuring it’s warm but not hot.
  6. In a clean, dry mixing bowl, pour in 1 cup of heavy whipping cream.
  7. Using an electric mixer, whip the cream on medium speed, then increase to high as it thickens.
  8. Whip until soft peaks form, being careful not to over-whip.
  9. Gently fold about a third of the whipped cream into the melted white chocolate using a spatula.
  10. Add the remaining whipped cream in two additions, folding gently each time to keep the mixture light and airy.
  11. Continue folding until the mixture is uniform in color and fluffy.
  12. Transfer the mousse to serving dishes, filling them about three-quarters full.
  13. Cover with plastic wrap or lids to prevent odors from the fridge affecting the mousse.
  14. Chill in the refrigerator for at least 2 hours to set.
