Crispy waffle cookies made in your waffle iron! A fun twist on classic cookies, perfect for a quick and easy treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • Optional: 1/2 cup chocolate chips, sprinkles, or other mix-ins

Instructions

  1. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Cream Butter and Sugars: In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Use an electric mixer for best results, beating for about 3-5 minutes until the mixture is pale and airy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix the dough.
  5. Incorporate Mix-Ins (Optional): If desired, gently fold in chocolate chips, sprinkles, or other mix-ins.
  6. Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes, or up to 2 hours.
  7. Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.
  8. Prepare the Waffle Iron: Lightly grease the waffle iron with cooking spray or brush with melted butter.
  9. Scoop the Dough: Scoop a generous tablespoon of dough onto the center of each waffle iron grid.
  10. Cook the Cookies: Close the waffle iron and cook for 2-3 minutes, or until the cookies are golden brown and crisp.
  11. Remove and Cool: Carefully remove the cookies from the waffle iron using a fork or spatula. Place them on a wire rack to cool completely.
  12. Repeat: Repeat steps 9-11 with the remaining dough.
  13. Decorate (Optional): Once the cookies are completely cool, you can decorate them with melted chocolate, sprinkles, powdered sugar, or any other toppings you like.
  14. Serve: Serve the waffle cookies immediately or store them in an airtight container at room temperature for up to 3 days.
